  • 1 lb. Fresh cutlet, in pieces
  • ½ lb. Pork ribs, in pieces
  • ½ lb. longaniza, in pieces
  • 2 Tbsp. Constanza Creole Seasoning
  • 1 red onion, minced
  • ½ cubanelle pepper, minced
  • 1 bougainvillea tomato, chopped
  • 2 Tbsp. olives
  • 2 Tbsp. Vegetable oil
  • 1 Tbsp. tomato paste
  • 4 cups of water
  • 2 cups rice
  • ¼ cup leek, minced


Season the meats with Constanza Creole Seasoning.

Heat a cauldron with the Oil and brown the meats well. Add the tomato paste and mix well. Add 1 cup of water and lower the heat to low and cook until the meats are tender.

Increase the heat and add 4 cups of water and rectify the flavor with Constanza Creole Seasoning (the water should be somewhat salty). When it boils, add the rice, mix and cook uncovered, over high heat, until the water evaporates completely.

Lower the heat to low and cover the cauldron. Cook covered for 10 minutes, uncover, stir well and cover again, cooking for another 10 minutes. Remove and serve chopped leek drizzle.
