Ingredients

  • 2 large carrots, peeled
  • 1 lb medium potatoes, peeled
  • 2 eggs
  • 2 tsp. salt divided amount (or more, to taste)
  • 1 medium beet, peeled (optional)
  • 1 apple cut into cubes (optional)
  • ½ cup of sweet corn (optional)
  • ½ cup of boiled green beans (petit pois)
  • 1 small red onion
  • ½ cup of Constanza Mayonnaise
  • 2 tbsp. of Constanza Vinegar

Preparation

Place the carrots, potatoes and eggs together in a pot. Add water until covered, plus a little extra. Add a teaspoon of salt to the water. After twelve minutes, remove the eggs and cook the rest until they are well cooked.

Let the carrot, potatoes, egg and beets cool to room temperature and dice them.

Chop the onion, add Constanza vinegar and let it rest until it is time to mix it with the rest of the ingredients (at least 10 minutes). Remove the vinegar.

Mix potatoes, carrots, eggs, apple (or beets), onion, corn, and beans. Add the Constanza mayonnaise and mix. Add salt to yor taste..
