Ingredients

  • ½ lb of prawns
  • 1 lb. squid
  • 2 lb. mussels
  • ½ lb clams
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 tomatoes. grated
  • Parsley to taste
  • 5 black peppercorns
  • 1 tbsp. of Constanza Garlic Paste
  • Salt to taste
  • A few of saffron threads
  • 2 cups of round rice
  • 5 cups of water or seafood/fish broth
  • Food coloring to taste
  • Extra virgin olive oil

Preparation

Clean the mussels by scraping the barbs and everything that has adhered to the shells. Put in a covered saucepan and remove as soon as they open, remove the shell and reserve.

Peel some of the prawns and leave some unpeeled, and cut the squid into pieces, wash the clams well.

Put two tablespoons of extra virgin olive oil in the pan and add the peppers, cut into regular pieces. When they begin to brown, add the peppercorns, the salt, the Constanza garlic paste, the parsley and the saffron threads. Mix and when cooked add the grated tomatoes. Cook for a couple of minutes and add the squid and clams. Let everything cook until the clams open.

At this time add the rice. Add the mussels without the shell and the peeled prawns. Pour in the hot water or broth, a little food coloring and mix. Spread the unpeeled prawns on the surface, a few mussels with their shells. When the broth starts to boil, lower the heat a little and cook for about 20 minutes. When this time has passed, cover with a cloth and let it rest for 4 or 5 minutes.
