Mashed Plantains with Shrimp

Ingredients

  • 4 whole green plantains
  • 12 jumbo shrimp
  • 2 tbsp. of Constanza Garlic Paste
  • Parsley, minced
  • 2 onions
  • 3 green peppers
  • 1 can of bell pepper
  • ¼ cup. of white wine
  • ⅓ lb. of butter
  • ⅓ cup of olive oil
  • Salt to taste
  • Pepper to taste
  • Chicken broth
  • 1 tsp. of Constanza Seasoning Powder
  • 1 bag of pork cracklings

Preparation

Cut the plantains into small pieces and fry in oil over high heat for 8 minutes. Then in a mortar mix the pork cracklings, Constanza garlic paste, oil to taste, Constanza seasoning powder to taste and the plantain, then repeat.

In a frying pan add a tablespoon of olive oil, Constanza garlic paste and the shrimp, then a pinch of pepper, a pinch of salt, season with the Constanza powder and minced parsley. After 2 minutes add the white wine, chicken broth, onion, green pepper and butter. Cook for 15 minutes. At the end add the bell pepper in strips.

Plate the mashed plantains along side with the shrimps and the garlic broth.
